Tea polyphenols are food additives, which are polyphenolic compounds mainly composed of catechins. They are extracted from tea leaves (Camellia sinensis L.) and are also known as Vitamin-like Polyphenols. The main catechins include epigallocatechin gallate (EGCG), epigallocatechin (EGC), epicatechin gallate (ECG), epicatechin (EC), and catechin (C).
The content of tea polyphenols is not the same in all types of tea. The deeper the fermentation degree of tea, the more tea polyphenols are converted into other substances, and the corresponding content of tea polyphenols will decrease. Green tea is unfermented, and its content of tea polyphenols is quite abundant. There are data showing that the content of tea polyphenols in green tea is 144% higher than that in black tea of the same quality, and about 59% higher than that in oolong tea of the same quality.
