1.Functional properties and applications of maltodextrin
Maltodextrin, derived from starch hydrolysis, is categorized by its DE value into MD10, MD15, and MD20. It is characterized by its smooth flow, lack of odor, excellent solubility, heat resistance, and low tendency to clump due to its low hygroscopic nature. It does not obscure the flavors of other ingredients and acts as a superior carrier. It is frequently utilized as a drying agent in the production of juice powder to prevent aggregation and to boost the product's solubility. Maltodextrin also serves as a favorable wall material in food microencapsulation, a technology extensively applied in industries such as biotechnology, medicine, food, agriculture, and cosmetics. Microcapsules, generally not more than 3mm in length, are classified into nanoscale (1–100nm) and microscale (100–1000nm) based on the size of the encapsulated product.

2.Macular Center Pigment: Meso-Zeaxanthin
Zeaxanthin, also known as (3R,3'R)-dihydroxy-β-carotene, Meso-Zeaxanthin, also known as (3R,3'S)-dihydroxy-β-carotene, and lutein are isomers that exist in the macular region of the human eye. The macula is rich in photoreceptor cells, and blue light hazard can cause the retinal pigment epithelial cells to atrophy or even die. Generally, the retina protects itself from excessive light exposure through the regulatory mechanism of pupil constriction, but this process occurs within a diameter range of 7-2mm and therefore cannot protect the central part of the retina, known as the fovea. However, the concentration of Meso-Zeaxanthin is higher in the central pigment of the retina, the closer to the center of the retina, and the selective absorption by the eye signifies the irreplaceable importance of Meso-Zeaxanthin.
